Blueberry Spoon Bread

Served sweet or savory, spoon breads have been delighting folks since America’s earliest days. Serve one as an unexpected side or pair it with coffee as an after-dinner treat.

Here, blueberries add a splash of tartness to the recipe that brings out all the amazing flavors. Try your own fruits and nuts to discover your perfect spoonful.


2 tablespoons butter

1 tablespoon raw sugar

3 cups blueberries

1 cup CB Old Country Store™ Buttermilk Baking and Pancake Mix

3 eggs

1/2 cup whole milk

Pinch of salt

1/2 cup sugar

1 teaspoon almond extract

1/2 cup sliced almonds

Powdered sugar for garnish


1. Preheat oven to 375°F.

2. Butter a 9” pie pan.

3. Sprinkle raw sugar over the bottom of the pan and add the blueberries.

4. In a medium bowl, whisk together the CB Old Country Store™ Buttermilk Baking and Pancake Mix, eggs, milk, salt, sugar, and almond extract.

5. Pour this mixture over the berries and sprinkle the almonds over the top.

6. Bake for 35-40 minutes or until the center is set and the top is lightly golden brown.

7. Serve with powdered sugar.


Tip: You can use any other fruits or nuts in this recipe, try blackberries and pecans or plums and walnuts.
