Sausage and Egg Crustless Quiche

Here’s a yummy recipe for quiche that’s a great choice for almost any occasion. From breakfast to brunch to lunch or dinner, there's never a bad time for this light, fluffy classic with a twist. Bring along on your next church social or family picnic. Its blend of two cheeses, breakfast sausage, and chilies will be a real crowd pleaser.


2 cups shredded cheddar cheese

2 cups cottage cheese

1 1/2 cups cooked breakfast sausage

1/4 cup green chilies, drained.  Optional, may be substituted with green peppers if desired.

1/2 cup CB Old Country Store® Buttermilk Baking and Pancake Mix

2 tablespoons butter, melted

6 eggs, beaten


1. Preheat oven to 400°F.

2. In a large bowl, stir together cheese, sausage, and chilies.

3. Add baking mix, melted butter, and eggs to the cheese mixture. Stir until blended.

4. Spoon into lightly greased 9-inch deep dish pie pan.

5. Bake at 400°F for 15 minutes.  Reduce oven temperature to 350°F and continue to bake for 30 minutes, or until light golden brown.

6. Serve immediately.
